Nel nostro gergo con il termine schienale s'intende il midollo spinale del bovino. Proprio quello che è stato al centro delle cronache negli ultimi anni, poichè sarebbe incriminato di veicolare il morbo di Creutzfeldt-Jacob . Ora il problema è risolto grazie a controlli più accurati e analisi durante la fase di macellazione. Nonostante questo, nel bovino adulto questa parte è tutt'ora eliminata all'origine.

Ma non voglio scrivere di questo aspetto della questione (che richiederebbe una competenza scientifica che non ho) ma bensì del lato "gastronomico". Infatti nel periodo natalizio ho avuto richiesta, da parte di clienti, proprio degli schienali (che al nord si chiamano filoni ) come ingrediente per alcune ricette regionali come ad esempio la cima alla genovese (in cui va il cervello, ma molti lo sostituiscono o integrano anche con gli schienali).

Nella tradizione romana di un tempo (ormai penso che siano ben pochi coloro che apprezzino queste cose) venivano passati nella pastella semplice con farina e uovo, oppure più ricca fatta con latte, uova olio e parmigiano. Una volta "panati" venivano fritti in olio bollente.
Prima dell'utilizzo degli schienali, è necessario metterli in un pentolino con acqua fredda e portare ad ebollizzione, avendo cura di non romperli.

Come si può vedere dalla foto sopra, il midollo si estrae con delicatezza dalla colonna vertebrale dell'animale. In pratica si trova alla base delle bistecche nel mezzo della "T" formata dall'osso.

Penso sia utile ricordare inoltre che c'è una bella differenza tra il midollo in questione e il midollo osseo . Quest'ultimo infatti è quello che si trova all'interno degli ossobuchi (e ossa in generale) e viene usato anche per fare il vero risotto alla milanese.
